Danish Spinach Ring Recipe

Ingredients
2 pounds spinach, trimmed
1/4 cup cream or milk
4 eggs, beaten
1/2 teaspoon sugar
1/2 teaspoon salt
Directions
1. Wash the spinach well and place in a deep saucepan. Cover and cook, without additional water, until tender, about two minutes. Remove to a wooden bowl and chop. Return to the pot.
2. Add the cream and heat to simmering. Do not boil. Stir a little of the spinach into the eggs, then return this mixture to the pot. Add the sugar and salt.
3. Turn into a greased ring mold. Place on a rack in a pot and surround with a little boiling water. Cover the pot and steam about thirty minutes. Or set in a pan of boiling water and bake in a moderate oven (350° F.) until set, about thirty minutes. The ring is done when a knife inserted in the center comes out clean.
