Danish Macaroni Salad Recipe
Ingredients
| 1 medium-sized cucumber, peeled, halved, seeded, and cut into 1/2-inch pieces | ||
| Pasta shells | 4 Ounce, cooked, drained | |
| 3 pickled herring filets, cut into 1/2-inch slices | ||
| 4 scallions, white part only, coarsely chopped | ||
| Mushrooms | 4 Small, thinly sliced | |
| Wine vinegar | 2 Tablespoon | |
| Olive oil | 2 Tablespoon | |
| Salt | 1 Teaspoon | |
| Curry powder | 2 Teaspoon | |
| Sour cream | 1 Cup (16 tbs) | |
Directions
In a salad bowl, place the cucumber, pasta shells, herring, scallions and mushrooms.
Pour in the vinegar-oil-salt blend and mix well but gently.
Refrigerate for 2 hours.
Just before serving, blend the curry and sour cream, pour over the salad and mix well.
