Danish Halibut Steaks Recipe
Ingredients
| Halibut steaks-4 | ||
| White wine- 200 ml / 8 fl oz / 1 cup | ||
| Lemon juice | 1 | |
| Fresh asparagus- 350 g / 12 oz, trimmed OR Canned aspragus- 1 (283 g / 10 oz, drained | ||
| Button mushrooms- 175 g / 6 oz / 1 1/2 cups, thinly sliced | ||
| Butter- 3 tablespoons / 40 g / 1 1/2 oz | ||
| Plain flour- 25 g / 1 oz / 1/4 cup | ||
| Milk- 174 ml / 6 fl oz / 3/4 cup | ||
| Single cream | 150 Milliliter | |
| Parsley | 1 Tablespoon, chopped | |
| Twists of lemon- to garnish | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
GETTING READY
1. Start by preheating the oven to 350° F
MAKING
2. In a buttered ovenproof dish, season and place the fish and pour over the wine and half the lemon juice
3. Take the fish and cover with butter papers and paoch in oven at 350° F for 15-€”20 minutes till the steaks are just cooked
4. In a pan, cook the asparagus then trim the tips and keep warm
5. In a pan, saute the mushrooms in the remaining lemon juice for 2-3 minutes
6. In the same pan, now melt the butter, stir in the flour and cook for 1 minute, then add the milk and fish juices and boil for 2 minutes, later add the cream, asparagus pieces and mushrooms
7. Take the halibut, and season, and add parsley, place halibut along with asparagus on a serving dish and cover with sauce

8. Serve with salads or wafers, french fries
