Danish Blue Salad Recipe

Ingredients
2 oz. Danish blue cheese, cut into small pieces
2 oz. Cheddar cheese, cut into small pieces
1 medium sized red pepper, white pith removed, seeded and thinly sliced
3 spring onions, trimmed and finely chopped
1 teaspoon dried dill
DRESSING
1/2 teaspoon prepared French mustard
6 tablespoons olive oil
2 tablespoons white wine vinegar
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
Directions
To prepare the dressing, in a small mixing bowl beat the mustard into the olive oil with a fork.
Gradually beat in the vinegar and add the paprika, salt and pepper.
In a medium sized serving bowl, combine the Danish blue and Cheddar cheeses, the red pepper, spring onions [scallions] and the dill.
Pour the dressing over the mixture and, using two large spoons, toss well to blend.
