Czechoslovakian Wafer Cake Recipe
This Czechoslovakian wafer cake is a rich mixture of honey, lemon juice and other ingredients in wafer thinness. Try it to feel how it melts in your mouth!
Ingredients
8 oz. plain flour
1 tblspn, lemon juice
1 tspn. Bi-carb.
3 oz. sugar
1 oz. butter
1 tblspn, honey
vanilla essence
Directions
Whisk the honey, sugar, lemon juice, vanilla and butter to a thick cream over a saucepan of boiling water.
Add the soda and whisk a little longer.
Remove from heat and fold in the flour, sifted with a pinch of salt.
When cool, turn onto a floured board.
Divide into five parts and roll each out to wafer thinness.
Cut into neat rounds.
Bake at 350° F for about 3 minutes.
These have to be watched very care- fully.
When golden, remove from oven.
Use a palette knife to remove from tray while still warm.
Cool completely before assembling.
Assemble shortly before using as the filling will make it go soft after a while.
Fill with any kind of custard filling or milk- tart filling, spreading a little over the top too and sprinkle with either toasted chopped nuts or grated chocolate.
