Ingredients
Filling:
1/2 Cup Pitted Prunes
1 Tbsp. Butter, Melted
1 Tbsp. Sugar
1/2 Tsp. Cinnamon
1/4 Cup Chopped Walnuts
1 1/2 Cups Flour
1/3 Cup Sugar
11/2 Tsp. Baking Powder
1/2 Tsp. Soda
1/4 Tsp. Mace or Allspice
1 Egg
2 Tbsp. Butter, Melted
1 Cup Buttermilk Cinnamon Sugar
Directions
Place pitted prunes in small bowl and cover with water.
Soak overnight or stew in microwave.
Drain.
Chop finely.
Add melted butter, sugar, cinnamon and nuts.
Set aside.
Combine flour, sugar, baking powder, soda and spice.
In another bowl, whisk egg, melted butter and buttermilk.
Quickly combine with dry ingredients.
Spoon batter into muffin cups one-third full.
Add one tablespoon prune filling.
Cover with batter until two-thirds full.
Sprinkle cinnamon sugar on top and bake until lightly browned.
