Ingredients
| Gherkins | 4 , pickled | |
| Sour cream | 2 Fluid Ounce | |
| White Stock - 450 ml | ||
| Butter | 1 1/2 Tablespoon (For the Veloute Sauce) | |
| Plain flour | 1 1/2 Tablespoon (For the Veloute Sauce) | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
MAKING
1) In a saucepan, bring the white stock to a boil
2) In the meanwhile, into a heavy saucepan, melt the butter and then tip in the flour
3) Using a whisk, briskly whisk in the flour to cook
4) Take off from the heat and add in the stock
5) Bring the sauce to a boll constantly whisking
6) Check the sauce for seasoning and add salt and pepper
7) Reduce the flame to low and allow the sauce to simmer till it coats the back of the spoon
8) Add in the gherkins and sour cream into the hot veloute
9) Take off from the heat and serve immediately
SERVING
10) Serve over poached fish or poultry.
