Ingredients
2 1/2 cups chopped onions
3 minced garlic cloves
1 teaspoon ground cumin
2 teaspoons ground coriander
1 1/2 teaspoons turmeric
1/2 teaspoon powdered ginger
1/2 teaspoon dried ground chili peppers
2 1/2 teaspoons salt
2 pounds lamb, cut in 1-inch cubes
4 tablespoons butter
2 cups water
2 egg yolks
2 tablespoons melted butter
1/2 cup cracker meal
2 egg whites, stiffly beaten
Directions
Pound or chop to a paste the onions, garlic, cumin, coriander, turmeric, ginger, chili peppers and 2 teaspoons salt.
Toss with the meat.
Melt the 4 tablespoons butter in a casserole or Dutch oven; cook the meat in it, stirring frequently until browned.
Add the water; cover and cook over low heat 45 minutes.
Beat the egg yolks, melted butter, and remaining salt; stir in the cracker meal.
Fold in the egg whites.
Chill 10 minutes and shape into walnut-size balls.
Arrange around the top of the meat; cover and cook over low heat 25 minutes.
