Ingredients

 Coconut1/2 Cup (16 tbs), grated
 Milk1 Cup (16 tbs)
 Butter4 Tablespoon
 2 onions, chopped fine
 Apple1 , unpeeled
 2 small tomatoes peeled and seeded
 Curry powder1 Tablespoon
 White wine1 Cup (16 tbs)

Directions

Place the coconut and milk in a bowl.
Soak 30 minutes.
Place the butter in a microwave-safe bowl and melt 3 minutes at HIGH.
Add the onions, stir and microwave 4 minutes at HIGH.
Stir, add the apple, tomatoes, curry powder and salt to taste.
Stir thoroughly.
Microwave 5 minutes at MEDIUM-HIGH.
Stir, add the coconut and milk and the white wine.
Mix and microwave 3 minutes at HIGH.
Puree in a food mill or food processor.
Adjust seasoning.
Warm 3 minutes at HIGH.
Serve.
