Ingredients

 
1 3-pound fresh or frozen dressed mackerel or frozen perch fillets
 
Lemon juice
 
1/3 cup all-purpose flour
 
1 tablespoon curry powder
 
1 teaspoon salt
 
3 tablespoons butter or margarine
 
1 recipe Fried Onion and Potatoes

Directions

Thaw fish, if frozen.
For the dressed fish, bone and halve lengthwise along backbone.
Cut each half crosswise into three portions.
Sprinkle with lemon juice.
Combine flour, curry powder, and salt.
Roll the fish in the curry mixture, coating evenly.
In a large skillet heat butter.
Place fish, skin side down, in a single layer.
Fry 3 to 4 minutes on each side or till golden and crisp, and fish flakes easily when tested with a fork.
To serve, arrange fish on platter with Fried Onion and Potatoes and cooked carrots, if desired.
Garnish with sprig of parsley, if desired.
