Curry Stuffed Eggs Recipe

Ingredients

| Butter | 2 Tablespoon, softened | |
| Onion | 2 Teaspoon, grated | |
| Salt | 1/8 Teaspoon (Curry Powder - 1 to 1 1/2 teaspoons) | |
| Mayonnaise | 1/4 Cup (16 tbs) (Curry Powder - 1 to 1 1/2 teaspoons) | |
| Shrimp - small, cooked with small pieces of chutney, toasted almonds, minced green onion, crumbled bacon or some cherry tomato slices for garnish | ||
Directions
MAKING
1) Using a knife, cut the egg into halves lengthwise
2) Take out the yolk from the white and keep aside
3) Sieve them into a bowl
4) Into a bowl, add in the butter, onion, curry powder and salt
5) Using a whisk, beat till fluffy
6) Mix together the yolks and the mayonnaise
7) Spoon the yolks into the whites, or use a decorating bag to pipe the yolks into the whites
8) Cover with cling wrap and chill in the refrigerator
SERVING
9) Garnish with crumbled bacon or shrimp, chutney or toasted almonds or minced green onion or slices of cherry tomato
