Curry Soup Recipe

I originally made this Curry Soup for my spouse but I can't stop eating it now! It is most popularly enjoyed as an Appetizer. I am certain both of us will be in agreement that this Curry Soup is really delicious.

Ingredients

 
1 medium onion,finely chopped
 
2 tablespoons butter
 
2 tablespoons flour
 
1 tablespoon curry powder
 
4 cups chicken stock
 
1 large apple, peeled, cored, and chopped
 
2 tomatoes, peeled and chopped
 
Juice of 1 lemon
 
2 tablespoons freshly grated coconut
 
1 cup light cream
 
Salt and fresh pepper to taste

Directions

In medium saucepan, cook onion in butter until tender.
Add flour and curry.
Cook 2 minutes.
Gradually add chicken stock.
Cook, stirring, until slightly thickened.
Add remaining ingredients except cream.
Bring to a boil, then reduce heat.
Cover and cook over medium heat 20 minutes.
Puree a small amount at a time in electric blender, food processor, or food mill.
Chill in a bowl placed in a bowl of ice cubes, stirring frequently.
Just before serving, add cream, salt, and pepper.
