Ingredients

 
1/2 cup chopped onion
 
1/2 cup chopped celery
 
2 tablespoons butter
 
1 tablespoon chopped parsley
 
1/4 teaspoon thyme
 
Half a bay leaf
 
1/8 teaspoon ginger
 
2 tablespoons flour
 
1 teaspoon curry powder (or to your taste)
 
2 cups light stock or bouillon

Directions

Saute onion and celery in butter until tender.
Stir in parsley, thyme, bay leaf, ginger, flour and curry powder.
Add stock, stirring constantly and cook until mixture thickens.
Continue cooking over low heat for 5 minutes.
Strain.
If made in advance, should be reheated and served hot.
