 Broiler-fryer chicken breast halves - 4, skinned and boned
 Olive oil2 Tablespoon
 Butter1 Tablespoon
 Green onions2
 Cornstarch4 Teaspoon
 Ginger1/2 Teaspoon (Curry powder - 2 teaspoons)
 Salt1/4 Teaspoon (Curry powder - 2 teaspoons)
 Chicken broth1 Cup (16 tbs) (Curry powder - 2 teaspoons)
 Peach preserves2 Tablespoon (Curry powder - 2 teaspoons)
 Peaches1/2 Cup (16 tbs), chopped (Curry powder - 2 teaspoons)
 Pecans1/3 Cup (16 tbs), chopped (Curry powder - 2 teaspoons)
 Parsley sprigs
 Peaches sliced

Directions

MAKING
1. In large frying pan, heat oil and butter to medium heat and sauté chicken and onions turning (being careful not to burn onions) for about 8 minutes such that chicken is brown.
2. In medium bowl, mix together cornstarch, curry powder, ginger, salt, chicken broth, preserves, peaches and pecans and pour peach mixture over chicken, stirring gently.
3. Reducing heat to low temperature simmer with cover for about 10 minutes such that the sauce thickens and fork can be inserted in chicken with ease.

SERVING
4. To serving dish remove the chicken along with sauce, garnish with parsley sprigs and sliced peaches.
