Ingredients

 1 medium-size red apple
 3 cups 1/2-inch-wide strips of cooked chicken
 Celery2 Cup (16 tbs), thinly sliced
 Roasted salted peanuts3/4 Cup (16 tbs)
 Raisins1/2 Cup (16 tbs)
 Pineapple1 Small
 Lettuce leaves 10 Large, crisped
 Crystallized ginger2 Tablespoon, candied

Directions

Core apple and cut lengthwise into thin slivers.
Combine apple, chicken, celery, 1/2 cup of the peanuts, raisins, and dressing; mix gently.
Peel and slice pineapple.
Arrange lettuce leaves on 4 dinner plates; place pineapple on lettuce and top with chicken salad.
Sprinkle salads with remaining 1/4 cup peanuts and, if desired, ginger.
