Ingredients

 
Raw Shrimp – 1 pound
 
Lemon Juice – 1 tablespoon
 
Celery – 2 cups
 
Pimento – 3 tablespoons
 
Hard Cooked Eggs – 3, coarsely chopped
 
Curried Dressing - ½ cup

Directions

GETTING READY
1) Peel and de vein the prawns

MAKING
2) In a small saucepan, cook the shrimps in water if necessary
3) Place in the refrigerator to chill
4) Leave the shrimps whole or cut into pieces, and sprinkle with lemon juice
5) Allow to stand in the juice for about 10 to 15 minutes
6) Add in the celery, pimento and eggs
7) Add in the curried dressing and toss the shrimps to coat

SERVING
8) Spoon the salad into a decorative bowl and serve immediately
