Ingredients
Salad
1 pork tenderloin (3/4 1 pound), trimmed of all visible fat
5 apples, diced
1 1/4 cups sliced celery
1/2 cup raisins
1/3 cup sliced scallions
1/4 cup slivered almonds, toasted
1/4 cup sliced ripe olives
6 lettuce leaf cups
Dressing
1/2 cup reduced fat mayonnaise
2 tablespoons skimmed milk
2 teaspoons lemon juice
1 teaspoon curry powder
Pinch of ground black pepper
Directions
To make the salad: Preheat the oven to 425 °F.
If necessary, to make the tenderloin a uniform size, fold the narrow ends under and tie with kitchen string.
Place the tenderloin on a rack in a shal low roasting pan.
Insert a meat thermometer near the center.
Roast for 30 minutes, or until the thermometer registers 160°F.
Cover and refriger ate overnight.
Cut the tenderloin into 1/2 cubes.
Place in a large bowl and add the apples, celery, raisins, scallions, almonds, and olives.
Toss to mix well.
To make the dressing: In a small bowl, whisk together the mayonnaise, milk, lemon juice, curry powder, and pepper.

Gently toss to coat evenly.
