Curried Poached Leg Of Lamb Recipe

Ingredients
1 whole or half a leg of lamb, boned and rolled
1 garlic clove, quartered
1 tbsp (15 mL) rosemary
1 tsp (5 mL) salt
1/2 tsp (2 mL) pepper
1 tbsp (15 mL) curry powder
6 medium carrots, whole
6 celery stalks, diced
8 to 10 medium potatoes
10 small white onions
1/2 cup (125 mL) water
1/2 cup (125 mL) cider or apple juice
Directions
Make 4 to 5 slits in the meat.
Stuff each one with a piece of garlic and a pinch of rosemary.
Mix together the salt, pepper and curry powder.
Sprinkle on top of the roast.
Place the meat in the centre of a glass or ceramic dish, with a lid if possible.
Place the vegetables around the meat.
Pour the water and the cider or apple juice over the vegetables.
Cover with waxed paper or plastic wrap or the lid from the dish.
Microwave 20 minutes at HIGH, then turn the meat.
Cover and microwave 10 minutes per pound (500 g) at MEDIUM.
Let stand 15 minutes before removing lid.
To serve, place the vegetables around the roast and the gravy in a sauceboat.
