Curried Lamb Recipe

Ingredients
2 pounds lean lamb
2 tablespoons oil
3 large onions
4 canots
3 tablespoons curry powder
1/2 teaspoon chili powder
1 teaspoon salt
2 cups chicken stock
Directions
Slice the lamb into thin slices about 1 1/2 inches long and 1 inch wide and set them aside.
Cut the onions into strips and the carrots into 1 inch pieces, employing the rolling cut.
Heat a pan with oil and saute the onions and carrots over medium heat till they brown.
Turn off the heat and allow to cool for 2 or 3 minutes.
Add the curry and continue to saute for 3 or 4 minutes, slowly adding the chili and salt, stirring constantly for 10 minutes.
Add the lamb and mix it well with the onions and carrots.
Add enough stock to cover the lamb and bring it to a boil.
Turn the heat low and simmer for about 1 hour and correct the seasoning with pepper and salt.
Serve with boiled rice.
