Curried Ham Souffle Recipe

Ingredients

 
4 tablespoons (1/2 stick) butter or margarine
 
1 small onion, grated
 
4 tablespoons all-purpose flour
 
1/2 teaspoon curry powder
 
1/4 teaspoon salt
 
Dash of pepper
 
2 cups milk
 
1/2 cup soft bread crumbs (1 slice)
 
2 cups ground cooked ham (about 1 pound)
 
4 eggs

Directions

1 Melt butter or margarine in a large saucepan.
Blend in onion, flour, curry powder, salt and pepper; cook, stirring all the time, just until mixture bubbles.
2 Stir in milk; continue cooking and stirring until sauce thickens and boils 1 minute.
Beat in bread crumbs until well blended; remove from heat; stir in ham.
3 Separate eggs, putting whites in a large bowl, yolks in a small bowl.
Beat yolks slightly with a fork; blend in a few spoonfuls of the hot ham mixture, then quickly stir back into mixture in saucepan, blending well.
Cool to lukewarm.
4 Beat egg whites until they form soft peaks; pour ham mixture over and gently fold in until no streaks of white remain.
5 Spoon into an ungreased 6-cup straight-side baking dish.
Set dish in a shallow baking pan; place on oven shelf; pour boiling water into pan to a depth of 1 inch.
6 Bake in moderate oven (350°) 1 1/2 hours, or until souffle is puffy-light and firm in center.
Serve at once.
