For Risotto:
 
1 cup arborio rice
 
2 cups vegetable broth
 
1 cup water
 
4 oz. cheese
 
2 oz. spinach
 
1 white onion
 
salt and pepper to taste
 
green onions
 
chilies
 
garlic
 
cilantro
 
olive oil
 
butter
 
1/2 cup white wine (optional)
 
Curried Grilled Salmon:
 
1 tsp turmeric
 
1 tsp salt
 
2 tsp red chili powder
 
4 tsp coriander
 
4 tsp cumin powder
 
1 tsp garlic powder
 
2 tsp onion powder
 
1 tsp garam masala
 
1 tsp lemon-pepper mix
 
1 tsp sugar
 
1 tsp mustard powder
 
salmon
 
olive oil
 
diced squash
 
diced capsicum
 
white/red onions
 
green onions
 
chili peppers
 
garlic
 
ginger
 
salt
 
fresh cilantro
 
lemon juice
 
black pepper
 
olive oil

Directions

Risotto:
Medium heat the pan.
Add olive oil to the pan.
Add onion, saute them.
Add spinach, and herbs, cook for 3 minutes.
Set the pan aside.
Medium heat the skillet.
Add rice to the skillet.
Cook the rice until it turns light brown.
Add wine to the rice.
As soon as the wine evaporates, add hot broth to the sauteed rice. (Gently add 1 laddle at a time), mix them well.
Wait until it is fully absorbed, repeat this step for 6-7 times.
Stir them well.
Add cheese, and cooked spinach.
Stir them well, transfer to a serving dish.
Curried Grilled Salmon:
In a large bowl, combine all the ingredients.
With your fingers, rub the herbs over squash, capsicum, and salmon.
Place them over a foil.
Marinade the fish and veggies in the foil pack for an hour.
Grill the marinated fish and veggies at medium heat for 10 minutes, turn each side for several minutes.
