Curried Eggs with Peas Recipe

Ingredients
6 eggs
1 teaspoon grated onion
1/2 teaspoon lemon juice
6 hamburger-type buns
4 tablespoons flour
1/4 .teaspoon mustard
1 teaspoon curry powder
1/2 teaspoon salt
4 tablespoons butter or margarine
1/4 teaspoon Worcestershire sauce
2 cups milk
No. 303 can peas (2 cups)
Directions
Preparation: Cook eggs in gently boiling water for 20 minutes.
Crack shells and roll eggs between palms of hands.
Slip off shells.
Grate onion.
Squeeze lemon juice.
Combine flour, mustard, curry powder and salt.
Split and toast buns.
Performance: Melt butter in blazer pan over boiling water.
Blend in seasoned flour, grated onion and Worcestershire sauce.
Gradually add milk, stirring until smooth and thickened.
Add eggs and peas and continue to cook over boiling water until thoroughly heated.
Stir in lemon juice.
Serve over toasted buns.
