Ingredients

 
1/2 pound sliced fresh mushrooms (2 cups)
 
2 tablespoons butter or margarine
 
1/2 teaspoon lemon juice, Salt and pepper to taste
 
2 cups milk
 
1 chicken-bouillon cube, crumbled
 
1/4 cup soft butter or margarine
 
1/4 cup flour
 
2 teaspoons curry powder
 
1/4 cup mayonnaise
 
1/4 teaspoon salt
 
1/8 teaspoon pepper, Dash cayenne, Dash nutmeg
 
2 egg yolks
 
2 tablespoons sherry
 
6 hard-cooked eggs, quartered
 
1/4 cup chopped parsley
 
6 slices hot toasted French bread,buttered, Bacon curls

Directions

Saute mushrooms in 2 tablespoons butter or margarine.
Season lightly with lemon juice, salt and pepper.
Set mushrooms aside, but keep them hot.
Heat milk and bouillon cube in top of double boiler, but over direct heat.
Make smooth mixture of flour and butter or margarine; add to milk.
Whisk until smoothly thickened.
Add mushrooms, curry powder and mayonnaise; season to taste with salt, pepper, cayenne and nutmeg.
Mix together egg yolks and sherry, and stir in.
Keep mixture hot over boiling water, or make it earlier in the day, refrigerate and reheat.
Just before serving, add hard-cooked eggs.
and parsley.
Heat thoroughly and spoon over hot French bread.
Garnish with bacon curls.
