I used to stop at this bagel joint down the street from my house in Dallas almost every morning. I was very limited in what I would get - curried egg salad with lettuce on a sesame bagel was one of the few.

 Bagel1 (Sesame Variety, Preferably Ray's New York)
 Hard boiled egg4 , chopped
 Hot curry powder1 Teaspoon
 Low fat mayonnaise2 Tablespoon
 Lettuce20 Gram

Directions

MAKING
1. Cut the bagel horizontally into half.
2. In a electric toaster, toast the bagel until it turns crisp.
3. In a mixing bowl, place eggs, add curry powder and mayonnaise,combine all ingredients well
4. On he lower half of the bagel, place lettuce, spoon a generous amount of the prepared egg salad, cap it with the top half of the bagel.

SERVING
5. Serve as breakfast with fresh juice, tea or coffee.

I love curried egg salad or fresh shrimp curried salad on sour dough sliced bread. It isn't so heavy and the sour dough bread is a great taste compliment to curry-sort of like tamarind is in curry or lime juice.

These are Ray's New York Bagels. They are made by Just Bagels! For a frozen bagel they are amazingly good - come out of the toaster nice and crispy on the outside and chewy on the inside! :) Nikko
