1 teaspoon honey
 
1/3 cup tomato juice
 
1/2 cup chopped fresh or low-sodium canned tomatoes
 
1/3 cup nonfat cottage cheese
 
1 tablespoon lemon juice

Directions

1. Place curry powder, tomato juice, cottage cheese, lemon juice, honey, and tomatoes in a food processor or blender and puree.
2. Chill, covered, for 30 minutes before serving.
