Ingredients

 
1 3 pound chicken
 
3 tablespoons oil
 
3 large onions, sliced
 
3 tablespoons curry powder
 
1 teaspoon chili powder
 
1 teaspoon crushed red pepper
 
1 teaspoon salt
 
1 no. 2 can tomatoes
 
1 cup soup stock

Directions

Cut the chicken into small pieces, Chinese style, and set it aside.
Heat a pan with the oil and saute the onions over medium heat until they brown.
Turn off the heat and let the pan cool for a few minutes.
Add the curry powder and saute with the onions, chili powder, crushed red pepper and salt and stir for about 10 minutes.
Add chicken and brown it well, pour in the can of tomatoes and bring it to a boil.
Add enough soup stock to barely cover the chicken and bring to a boil again.
Lower the heat and simmer for 1 1/2 hours.
Serve with rice.
