Ingredients
1 lb. boneless beef top sirloin steak, cut 1 1/4 inches thick
2 sm. onions, each cut into 6 wedges
1 tbs. chopped fresh cilantro Marinade:
2 tsps. vegetable oil
1 lg. clove garlic, crushed
1 tsp. curry powder dash ground red pepper Tomato Couscous:
2 tsps. vegetable oil
1/4 cup slivered almonds
1 lg. clove garlic, crushed
1 tsp. curry powder dash ground red pepper
1 cup boiling water
3/4 cup couscous
1/2 tsp. salt
2 sm. tomatoes, chopped
Directions
Trim fat from beef steak.
Cut steak into 1 1/4 inch pieces.
In medium bowl, combine marinade ingredients.
Add beef and onions, tossing to coat.
Alternately thread beef and onions onto each of four 12 inch metal skewers.
Place kabobs on grid over medium coals.
Grill 8-11 minutes for rare to medium doneness, turning once.
Season with salt, if desired.
Sprinkle with cilantro.
Meanwhile prepare Tomato Couscous.
Serve kabobs with couscous.
Tomato Couscous: In sm.saucepan, heat oil over medium heat until hot.
Cook and stir almonds, garlic, curry powder and red pepper 4-5 minutes or until almonds are lightly browned.
Remove pan from heat; stir in boiling water, couscous and salt.
Cover and let stand 5 minutes.
Add tomatoes, mixing lightly.
Cook's Tip: Kabobs can also be broiled.
Place kabobs on rack in broiler pan so surface of meat is 3 - 4 inches from heat.
Broil 9-12 minutes, turning occasionally.
