Curried Whole Wheat Couscous Pilaf Recipe

The flavor of this Curried Whole Wheat Couscous Pilaf is really delicious. Curried Whole Wheat Couscous Pilaf was something new for me to try and I was more than glad that I indeed did try it! Do make it!

Ingredients

 
1 small onion, chopped
 
1 clove garlic, minced
 
2 tbs (30 ml) butter
 
1 cup (240 ml) mushrooms, sliced
 
1/2 red bell pepper, chopped
 
1/2 cup (120 ml) fresh or frozen peas
 
1/2 cup (120 ml) green onions, chopped
 
1 1/2 cups (355 ml) water or broth
 
1/4 tsp (1 ml) salt
 
2 tsp (10 ml) curry powder
 
1 cup (240 ml) Whole Wheat Couscous

Directions

In a covered saucepan on low heat, saute onion and garlic in butter until soft.
Add mushrooms, red bell pepper, peas and green onions and cook until nearly tender.
Add water, salt and curry powder and bring to a boil.
Add couscous, stir, reduce heat, cover and cook for 3-5 minutes or until liquid is absorbed.
