Curried Vegetables Recipe
First of all let me thank my neighbor for sharing this excellent Curried Vegetables recipe. I tried this recipe for Curried Vegetables the other day and was totally bowled over. This is the most comforting Side Dish recipe I have come across. The Asian Curried Vegetables is most often prepared with Vegetable as the main ingredient. Whether you are an amateur cook or a professional chef, I recommend the Curried Vegetables for the sheer joy of cooking it.
Ingredients
1 medium sized onion, chopped
2 tablespoons oil
1 small head cauliflower, broken into flowerets
1 medium sized eggplant, peeled and cut into 1 inch cubes
2 green peppers, cut into 1/4 inch strips
4 medium sized carrots, sliced into 1/4 inch rings
1/2 lb. green string beans, broken in half
1 teaspoon chili powder
1 teaspoon cumin
3/4 teaspoon turmeric
1/2 teaspoon cardamom
1 bay leaf
1/2 cup boiling water
1/2 cup tomato juice
Directions
Saute onion in oil until yellow.
Add vegetables, spices and bay leaf, cook about 5 minutes.
Add boiling water and simmer 10 minutes.
Add tomato juice and cook until vegetables are tender.
Remove bay leaf.
Correct seasoning.
