Curried Veal With Rice Recipe

Ingredients
4 tsp Mazola corn oil
1 lb. boneless veal, cut into 1/2 in. (13 mm) cubes
2 cup green apple, coarsely chopped
1 cup onion, finely chopped
1/2 cup sweet red pepper, cut into thin strips
1 clove garlic, minced
2 tsp curry powder
1 tsp ginger
1 cup apple juice
3/4 cup chicken broth
2 tsp cornstarch
1/4 cup cold water
2/3 cup regular rice, cooked without salt
1/2 cup unsalted peanuts
1/2 cup raisins
1/2 cup green onion, sliced
Directions
In a Dutch oven, heat 2 tsp (30 mL) of the oil over medium-high heat.
Add veal, half at a time and cook, turning occasionally, about 5 minutes or until brown.
Remove.
Heat remaining oil and add next 6 ingredients.
Cook, stirring, 2 minutes or until onion is tender.
Return veal to Dutch oven.
Stir in juice and broth.
Bring to a boil, reduce heat and simmer 20 minutes or until veal is tender.
Mix the cornstarch and water.
Add to veal mixture.
Stirring constantly, bring to a boil and boil 1 minute.
Add veal, half at a time and cook, turning occasionally, about 5 minutes or until brown.
