Curried Turkey Soup Recipe

Ingredients

 3 or 4 slices lean bacon, minced
 Onions1 Cup (16 tbs), chopped
 Tart apple3/4 Cup (16 tbs), diced
 Garlic1/2 Teaspoon, minced
 Curry powder2 Teaspoon
 Cardamom1/4 Teaspoon
 Salt1/2 Teaspoon
 Turkey stock6 Cup (16 tbs)
 Egg yolks3 , beaten
 Buttermilk1 Cup (16 tbs)
 1 to 1-1/2 cups cubed cooked turkey Minced fresh parsley
 Slivered almonds, browned in butter

Directions

Cook bacon until crisp.
Remove with slotted spoon and set aside.
Saute onions, apple and garlic in drippings until onions are soft.
Sprinkle with curry powder and cardamom; cook, stirring, 3 minutes.
Add salt and stock, cover, bring to gentle boil, lower heat and simmer 30 minutes.
Puree.
Beat together yolks and buttermilk and add to puree with turkey.
Bring just to boil, adjust seasonings and sprinkle generously with parsley.
Pass reserved bacon bits and almonds.
