Curried Tuna Salad For Two Recipe
Ingredients
| 1/2 cup small shell macaroni | ||
| Apple | 1 Large | |
| Lemon juice | 2 1/2 Tablespoon | |
| Celery | 1 Cup (16 tbs), sliced | |
| Seedless raisins | 1/2 Cup (16 tbs), halved | |
| 1/4 cup thinly sliced green onion | ||
| Tuna | 1 Can (10oz), drained | |
| Mayonnaise | 1/2 Cup (16 tbs) | |
| Dijon Mustard | 1 Teaspoon | |
| Curry powder | 1 1/2 Teaspoon | |
| Salt | To Taste | |
| Almonds | 1/3 Cup (16 tbs), sliced | |
| Lettuce leaves | ||
Directions
Cook macaroni as directed on package; drain and chill.
Dice apple; in a salad bowl, mix apple with lemon juice until coated.
Add celery, raisins, onion, and macaroni.
Add tuna, broken in chunks.
Combine mayonnaise, mustard, and curry powder.
Mix gently into salad.
Add salt to taste.
Cover and chill up to 2 hours.
Mix half the almonds into salad.
