Curried Shrimp Recipe
Ingredients
| Medium | 1 1/2 Pound | |
| Oil | 2 Tablespoon | |
| Onion | 1 , finely chopped | |
| Green pepper | 1/2 To taste, finely chopped | |
| Curry powder | 1 Tablespoon | |
| Cumin | 1/4 Teaspoon | |
| Cayenne pepper | 1 Dash | |
| Flour | 2 Tablespoon | |
| Chicken broth | 1 1/2 Cup (16 tbs) | |
| Lemon juice | 1 Teaspoon | |
| Tomato Paste | 1 Tablespoon |
Directions
GETTING READY
1) Peel, devein, and wash shrimp and keep aside.
MAKING
2) In a 1-1/2 quart glass casserole, heat oil on highest setting for 30 seconds.
3) Stir in onion and green pepper and cook for 1 minute.
4) Add curry powder, cumin, cayenne pepper and cook for 20 seconds.
5) Add flour and then stir in chicken broth, lemon juice, and tomato paste.
6) Cook for 3 minutes and then stir in the shrimps and cook further for 3 minutes.
SERVING
7) Sprinkle toasted coconut and serve with rice and chutney.
