Ingredients

 
1 package (1 1/3 pounds) PERDUE Fit 'n Easy fresh skinless and boneless turkey breast
 
1/2 cup reduced-sodium chicken broth
 
1/2 cup reduced-calorie mayonnaise
 
1/2 cup plain low fat yogurt
 
1 tablespoon peach or mango chutney
 
2 to 3 teaspoons curry powder
 
Salt and ground black pepper to taste (optional)
 
1 red apple, unpeeled, cored and sliced
 
1 green apple, unpeeled, cored and sliced
 
3/4 cup red and/or green seedless grapes
 
2 tablespoons snipped fresh chives
 
Curly green or Bibb lettuce

Directions

Microwave Directions: In deep 2-quart microwave-safe dish, place turkey breast and broth.
Cover with plastic wrap and microwave at HIGH (100% power) 3 minutes.
Reduce power to MEDIUM-HIGH (70% power) and microwave 7 minutes.
Turn turkey breast over; cover with plastic wrap and microwave at MEDIUM-HIGH 7 minutes longer.
Cover dish with aluminum foil and cool in broth.
In medium bowl, combine mayonnaise, yogurt, chutney, curry, salt and pepper; blend well.
Remove turkey from broth and cut into small cubes; add to mayonnaise mixture.
Add apples, grapes and chives; toss gently to coat ingredients with dressing.
