Ingredients
2 cups chilled cooked rice
1 green pepper, shredded
2 tablespoons drained pimientos, cut in strips
2 tablespoons raisins
2 tablespoons chopped parsley
2 tablespoons chopped green onion
1/2 cup olive oil
1/3 cup wine vinegar
1 tablespoon lemon juice
1 clove garlic, minced or mashed
1 tablespoon sugar
1/2 teaspoon curry powder
Salt and pepper to taste
Salad greens
Green pepper rings
Tomato wedges
Directions
Using two forks, toss together the rice, green pepper, pimientos, raisins, parsley, and onion.
Chill thoroughly.
Combine oil, vinegar, lemon juice, garlic, sugar, curry powder, salt, and pepper.
Just before serving, pour over salad and toss thoroughly.
Arrange salad in a bowl or casserole.
Garnish with crisp greens, green pepper rings, and tomato wedges.
