Curried Rice Recipe

This Curried Rice recipe is easily right at the top of my most loved recipe list. This Curried Rice is so tasty that I cannot resist serving it as a Side Dish often. Rice is the main ingredient in this Curried Rice. Treat your friends to this Curried Rice and let them know its taste.

Ingredients

 
1 tablespoon olive oil
 
1/2 cup finely chopped onion
 
1 clove garlic, pressed
 
1 tablespoon curry powder
 
1 cup long-grain white rice
 
2 cups chicken stock
 
2/3 cup currants or raisins
 
1/4 cup cored and diced Granny
 
Smith apple (leave skin on) 1/2 cup chopped pecans, almonds, or pistachios

Directions

1. Heat a medium saucepan over medium heat and add the oil. When the oil is hot, add the onion, garlic, and curry powder, and cook over medium-low heat, stirring occasionally, until the onion is soft, about 5 minutes.
2. Stir in the rice and broth and bring to a boil. Cover, reduce heat to low, and cook about 20 minutes, or until the broth has been absorbed.
3. Stir in currants or raisins, apple, and nuts.
