Curried Potatoes Recipe
Curried potatoes is a spicy and savory potato recipe. Cooked along with onions, the curried potatoes is simple yet flavorful. Served with rice or flatbreads, it makes a good meal.
Ingredients
4 medium size all purpose potatoes peeled and cut into 1 inch cubes
4 teaspoons unsalted margarine
1 medium size yellow onion, chopped
1 tablespoon curry powder
Directions
In a medium size heavy saucepan, bring 3 cups unsalted water to a boil.
Add the potatoes and cook, partially covered, over moderate heat until fork tender about 15 minutes.
Meanwhile, in a heavy 10 inch skillet, melt the margarine over moderate heat; add the onion and cook, uncovered, until soft about 5 minutes.
Stir in the curry powder and cook 1 minute longer.
As soon as the potatoes are tender, drain, add to the skillet, and cook, stirring, for 1 minute.
Transfer to a heated platter.
