Curried Potato Salad In Green Pepper Shells Recipe
Ingredients
| Potatoes | 6 Medium | |
| Green pepper | 1/4 Cup (16 tbs), chopped | |
| Celery | 1/2 Cup (16 tbs), chopped | |
| 1 cup mayonnaise, preferably homemade, or 1/2 cup sour cream and 1/2 cup mayonnaise | ||
| Curry powder | 2 Teaspoon | |
| Chives | 3 Tablespoon, chopped | |
| Green peppers | 6 Medium | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Cook potatoes in boiling salted water until tender.
Drain.
Cool slightly.
Remove skins and cube.
Combine warm potatoes with chopped green pepper and celery in a large bowl.
Combine mayonnaise, curry powder, chives, salt, and pepper.
Stir into potatoes and toss gently to coat.
Cut slices off tops of green peppers.
Remove seeds and membrane.
Parboil in boiling water for 5 minutes.
Drain and plunge into ice water.
Pat dry.
Spoon potato salad into pepper shells.
Drain.
