Classic Curried Pork Tenderloin Recipe
Ingredients
| Pork tenderloin | 1 pound | |
| Brown sugar | 1 Tablespoon | |
| Curry powder | 2 Teaspoon | |
| Dry mustard | 1 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| 1/2 teaspoon Hungarian sweet paprika | ||
| Pepper | 1/2 Teaspoon | |
| Vegetable cooking spray | ||
| Mango chutney | 1/2 Cup (16 tbs) | |
Directions
Preheat oven to 425°.
Trim fat from pork.
Combine brown sugar and next 5 ingredients in a small bowl; stir well.
Rub spice mixture evenly over pork.
Place pork on a broiler pan coated with cooking spray; insert a meat thermometer into thickest portion of tenderloin.
Bake at 425° for 25 minutes or until thermometer registers 160° (slightly pink).
Let pork stand 5 minutes before slicing.
