Curried Pork Recipe

This curried pork is a fruited pork recipe. Cooked in vegetable juice and spiced with cloves, garlic and curry powder, the curried pork has apples and raisins in it. Simmered to a finish, it can be served with rice.

Ingredients

 
1 pound boneless pork, cut into 3/4-inch cubes
 
2 tablespoons all-purpose flour
 
2 tablespoons butter or margarine, divided
 
1 large onion, chopped
 
1 medium apple, chopped
 
2 cloves garlic, minced
 
2 teaspoons curry powder
 
1 1/2 cups Vegetable Juice
 
2 tablespoons raisins
 
Hot cooked rice

Directions

In medium bowl, toss pork with flour to coat.
In 10-inch nonstick skillet over medium heat, in 1 tablespoon hot butter, cook half of the pork until browned on all sides; remove with slotted spoon.
Repeat with remaining butter and pork; remove from skillet.
In same skillet over medium heat, cook onion, apple, garlic and curry until onion is nearly tender, stirring often.
Stir in juice, raisins and pork.
Heat to boiling, stirring occasionally; reduce heat to low.
Cover; simmer until pork is no longer pink, about 10 minutes.
