Curried Pasta Salad Recipe
Ingredients
| Corkscrew pasta | 4 Ounce, uncooked | |
| Pineapple chunks | 1 Can (10oz) | |
| 1/2 cup fat free or reduced fat mayonnaise | ||
| 2 teaspoons packed brown sugar 1 teaspoon curry powder | ||
| Mandarin oranges | 1 Can (10oz), drained | |
| 1 1/2 cups cooked chicken breast or turkey breast strips | ||
| Celery | 1/2 Cup (16 tbs), sliced | |
| 1/4 cup chopped green onions | ||
Directions
Cook pasta as package directs; drain.
Drain pineapple chunks, reserving 3 tablespoons juice.
Stir reserved juice, mayonnaise, sugar and curry in large serving bowl until blended.
Add pasta, pineapple chunks, mandarin oranges, chicken, celery and green onions to curry dressing; toss to evenly coat.
