Ingredients
| Brazil nuts | 1/2 pound, finely chopped | |
| Tomatoes | 1/2 pound, peeled | |
| Onion | 2 Medium, finely chopped | |
| Whole-wheat Breadcrumbs - 3 ounce (75gram) | ||
| Garlic | 1 Clove (5gm), crushed | |
| Mixed herb | 1 Teaspoon, dried | |
| Mild Curry Powder - 1 teaspoon | ||
| Egg - 1. beaten | ||
| Cooking Oil | ||
| Salt | To Taste | |
| Ground pepper | 1 To taste | |
Directions
GETTING READY
1) Preheat the oven to 350 F
MAKING
2) Into a frying pan, sauté the onions with some pepper in oil
3) Mix the nuts and breadcrumbs together into a large bowl, adding the garlic, herbs and curry powder
4) Stir in the onion, pepper and tomatoes and mix well
5) Add the beaten egg to bind mixture together
6) Into a prepared tin, pack the mixture firmly
7) Bake for 30-40minutes at 350 F
till the colour turn s a golden brown
SERVING
8) Serve hot with spiced rice, yoghurt and mango chutney
9) It can also be served as a cold salad
