Curried Lentils with Fruit Recipe
Ingredients
| 1 1/2 cups uncooked lentils, rinsed, sorted and drained | ||
| 1 Granny Smith apple, cored, peeled and chopped | ||
| Golden Raisins | 1/4 Cup (16 tbs) | |
| 1/4 cup lemon nonfat yogurt | ||
| Curry powder | 1 Teaspoon | |
| Salt | 1 Teaspoon | |
Directions
1. Combine 2 quarts water and lentils in large saucepan; bring to a boil over high heat. Reduce heat to medium-low. Simmer 20 minutes, stirring occasionally.
2. Stir apple and raisins into saucepan; cook 10 minutes or until lentils are tender. Drain lentil mixture; discard liquid.
3. Place lentil mixture in large serving bowl; stir in yogurt, curry powder and salt until well blended. Garnish as desired.
