Curried Lentil Soup Recipe
Ingredients
1/2 cup diced carrots
1/2 cup diced onions
1/2 cup chopped celery
1 16-ounce can chopped tomatoes with juice
3/4 cup dried lentils
4 cups water
2 teaspoons curry powder (preferably Madras)
2 tablespoons low-fat yogurt (garnish)
Directions
Puree the carrots, onions, and celery in a food processor or blender on medium to high speed.
Place in a large stockpot with the tomatoes and juice, the lentils, water, and curry.
Bring to a boil, then reduce heat and simmer for 3 hours.
