Curried Garbanzo Beans & Rice Recipe
I always jokingly say that Curried Garbanzo Beans & Rice is my soul's food. I heard my husband quote the same about Curried Garbanzo Beans & Rice the other day. I will not be surprised if you say the same thing too.

2 tbs (30 ml) olive oil
1 medium onion, chopped
1 medium green bell pepper, diced
2 15-oz cans (900 g) Organic Garbanzo Beans, drained and rinsed
2-4 cloves garlic, finely chopped
2 tsp (10 ml) curry powder
1/2 cup (120 ml) water
14-oz can (420 g) plum tomatoes, chopped, reserving liquid
2 10-oz pkgs (600 g) frozen chopped spinach, thawed and squeezed dry sea salt, to taste
Directions
In large saucepan, heat oil.
Add onion and green pepper; cook over medium heat, stirring occasionally, 3-5 minutes.
Add garbanzo beans, garlic, curry and water; bring to a simmer, cover and cook 5 minutes.
Stir in tomatoes and their liquid.
Add spinach and cover and cook 10 minutes.
Salt to taste.
