Curried Garbanzo Beans & Rice Recipe
I always jokingly say that Curried Garbanzo Beans & Rice is my soul's food. I heard my husband quote the same about Curried Garbanzo Beans & Rice the other day. I will not be surprised if you say the same thing too.
Ingredients
| Olive oil | 2 Tablespoon | |
| Onion | 1 Medium, chopped | |
| Green bell pepper | 1 Medium, diced | |
| Garbanzo beans | 2 15 Ounce, drained, rinsed | |
| Garlic | 4 Clove (5gm), finely chopped | |
| Curry powder | 2 Teaspoon | |
| Water | 1/2 Cup (16 tbs) | |
| Chopped tomatoes | 14 Ounce | |
| Frozen chopped spinach | 2 10 Ounce, squeezed |
Directions
In large saucepan, heat oil.
Add onion and green pepper; cook over medium heat, stirring occasionally, 3-5 minutes.
Add garbanzo beans, garlic, curry and water; bring to a simmer, cover and cook 5 minutes.
Stir in tomatoes and their liquid.
Add spinach and cover and cook 10 minutes.
Salt to taste.
