Ingredients

 Bean curd8 Ounce, drained
 1/2 cup lemon-flavored yogurt
 Curry powder1/2 Teaspoon
 1 (16-oz.) can water-packed peach slices,drained
 Raisins1/4 Cup (16 tbs)
 Unsweetened shredded coconut2 Tablespoon
 Almonds2 Tablespoon, sliced
 4 leaves curly endive or other leaf lettuce
 4 slices Poppy-Seed Egg Braid, other egg bread

Directions

In a medium bowl, break up tofu with a fork or pastry blender until crumbly.
Stir in yogurt and curry powder.
Add peach slices, raisins, coconut and almonds.
Stir gently to combine.
Arrange endive or lettuce on bread slices.
Spoon tofu mixture over endive or lettuce
