Curried Fishwiches Recipe
These Curried Fishwiches are what I bank upon when really hungry. English muffins with buttered, cheesed and seasoned fish sticks filling are a heavenly treat ! Just try these curried Fishwiches for your next meal and let me know if you like them .
Ingredients
2 eggs
6 English muffins, split Butter or margarine
2 8-ounce packages frozen breaded fish sticks
3 tablespoons butter
3 tablespoons all-purpose flour
3/4 teaspoon curry powder
3/4 teaspoon dry mustard
2 1/4 cups milk
1 teaspoon minced dried onion
1 cup cubed or shredded American cheese (4 ounces)
1 tablespoon lemon juice
Directions
Preheat broiler.
In saucepan cover eggs with cold water.
Bring to boiling.
Reduce heat to just below simmering.
Cover; cook 15 minutes.
Meanwhile, toast muffins under broiler; remove and spread with butter.
Broil fish 4 inches from heat for 4 to 6 minutes.
Meanwhile, melt the 3 tablespoons butter.
Blend in flour, curry, mustard, 1/2 teaspoon salt, and 1/8 teaspoon pepper.
Add milk and onion.
Cook and stir till mixture thickens.
Stir in cheese; heat and stir till melted.
Cool eggs under cold running water.
Peel and chop eggs; stir into sauce.
Drizzle fish with lemon juice.
Place fish on muffin bottoms; spoon sauce over.
