Curried Fish Risotto Recipe
Ingredients
| Onion | 1 Large, chopped | |
| Oil | 2 Tablespoon | |
| Flour | 1 Tablespoon | |
| Curry powder | 2 3 Tablespoon | |
| Chicken stock | 2 1/2 Cup (16 tbs) | |
| Long grain rice | 1 Cup (16 tbs) | |
| Green pepper | 1 , sliced | |
| 1 small Granny Smith apple, peeled, cored and chopped | ||
| Golden Raisins | 1 Tablespoon | |
| black pepper | 1 | |
| 1 1/2 pounds firm white fish, skinned and boned | ||
Directions
Saute the onion in the oil until soft but not brown.
Stir in the flour and curry powder and cook for 1 minute.
Add the stock, rice, pepper, apple and golden raisins and season to taste.
Cover the pan and simmer for 15 minutes, stirring occasionally.
Cut the fish into bite-sized pieces, add to the curry and simmer for 5 minutes, until rice and fish are cooked.
Stir in the flour and curry powder and cook for 1 minute.
Add the stock, rice, pepper, apple and golden raisins and season to taste.
Cover the pan and simmer for 15 minutes, stirring occasionally.
Cut the fish into bite-sized pieces, add to the curry and simmer for 5 minutes, until rice and fish are cooked.
