Curried Corn With Red Bell Pepper And Herbs Recipe
Ingredients
1 teaspoon olive oil
1 Spanish onion, chopped
1 red bell pepper, chopped
1 tablespoon curry powder
2 1/2-3 cups corn kernels, fresh or frozen
1/4 cup water or chicken or vegetable broth
2 tablespoons chopped fresh parsley, basil, or cilantro
Directions
1. Heat a skillet over medium heat and add the olive oil. When the oil is hot, add the onion, bell pepper, and curry, and cook until the vegetables are soft.
2. Add the corn and water or broth, and cook until corn is heated and liquid has almost evaporated, about 5 minutes.
