Curried Cod Bake Recipe
Ingredients
| Cod package | 2 , frozen | |
| Onions | 2 Large, chopped | |
| Garlic | 1 Clove (5gm), minced | |
| Butter/Margarine | 2 Tablespoon | |
| 3 medium-size apples, pared, quartered, cored and sliced | ||
| Tomato Paste | 1 Can (10oz) | |
| Water | 3/4 Cup (16 tbs) | |
| Salt | 2 Teaspoon | |
| Curry powder | 1 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
Directions
1. Cut the cod into 6 serving-size pieces; place in a 6-cup, shallow, baking dish.
2. Saute onions and garlic in butter or margarine until soft in medium-size skillet; stir in the apples, tomato paste, water, salt, curry powder and pepper. Heat, stirring constantly, to boiling; spoon over fish; cover.
3. Bake in moderate oven (350°) for 30 minutes, or until the fish flakes easily.
